Mr Potato Head's Egg and Potato Scramble

We like to scramble eggs with potatoes so why not make it in a toddler size meal! The egg provides 1 serving of a protein. The potato provides 1 serving of a vegetable, and with adding milk to the scramble, you have a dairy serving also! And this is a great recipe to cook up quickly if you have leftover baked potatoes.

Looking at an old Mr. Potato Head, this recipe came to mind!









Ingredients:

  • 1 egg
  • 1/4 c milk
  • 1 small baked potato
  • 1 Teaspoon butter

Instructions:

1. Bake your potato ahead of time, or do like I do and bake a few at a time and put them in the refrigerator for later use.

2. Heat the butter in a small skillet

3. Discard the skin of the potato and smash the potato in the heated butter small skillet.

4. In small mixing bowl, add egg and milk and whisk til mixed.

5. Pour the egg/milk mixture into the skillet over the mashed potato.

6. Cook til desired scramble, cool and serve!
